Yippee. I turned 26 last week so I guess that means I can do all the exciting things like:
[Googles “Things you can do when you turn 26”].
Unfortunately, I did not get a lot of search results back. The first result was something on Thought Catalog which seemed depressing so I just skimmed it and moved on. Glamour wants me to start tracking my medical expenses and to “Choose the health insurance plan that is suitable for my lifestyle”. Doesn’t say anything about how to avoid a second quarter life crisis.
Moving on.
Long story short, 26 is really not that exciting other than the fact that it’s an excuse to eat cake for breakfast and sleep in. What they don’t tell you is that when you turn 26 your internal alarm clock doesn’t allow you to sleep past 8am on a good day and if you eat too much salty food your fingers will swell up like sausages the next day.
You do get to eat cake for breakfast though, and if it’s this funfetti cake from Molly Yeh then you’re not doing too bad. All of Molly’s recipes are beautifully photographed and a solid 45% of them require sprinkles. Win and win. I made a few substitutions to make it dairy free but did basically zero of the heavy lifting so I’m not going to take credit for that. Here are the substitutions I made:
earth balance for butter
coconut milk for whole milk
arrowroot starch for corn starch
coconut oil for flavorless oil
I did not experiment with any egg substitutes but next time I would like to see how aquafaba holds up.
Other life updates:
Work is still busy, per usual.
Biking is great, but it’s been mostly indoors.
Snow, snow, and more snow.
Started brewing my own kombucha again. Is that trendy or thrifty?
This winter has seriously made me question why I live here.
I went biking in Arizona last month for a long weekend, it was magical.
I’ve been making a lot of recipes from other bloggers, some of my favorites right now:

I also made grain free chocolate chunk cookies from the One Part Plant cookbook and I can’t wait to make an espresso version of them soon. Anything that includes coffee and chocolate is a winner in my book.
