Phew. I’ve been MIA from the blog for a few weeks. Contrary to my dream fantasy where I am a food blogger and get to make cookies and noodle dishes and shoot pretty photos of food all week – the reality is that my job/biking/life have gotten in the way of blogging recently. I’m back! And then, I’ll most likely be gone again because we’re going to Europe in ONE WEEK and I’m totally not ready.
This weekend we are going to Rock the Garden on Saturday. I also need to figure out which trains we’re going to take while my brother and I are in Germany because well, I’m a planner. Not sorry ’bout it. I also need to try and pack some of my apartment so that July isn’t an absolute nightmare for me. I also need.. okay – you get it.
And in case you were wondering about those blueberry scones I tried a few weekends ago – fail. Dan liked them because he “doesn’t like scones, but they don’t taste like scones”. Like I said, fail.
We also went to Galactic Pizza this week. Located in Uptown, they offer tons of vegan pizza options on their menu! They definitely use Daiya cheese, so ask for “light” or none if you aren’t partial to it (that’s me). I prefer nut substitutes usually for cheese.
I’m sharing some of my favorites today on the blog, with a chocolate-y surprise coming in this Sunday’s post! Okay, I’ll give you a hint.

If you live in Minneapolis, you definitely need to check out Milkjam Creamery. Located in Uptown, this place has the best non dairy ice cream flavors I’ve had to date. Their serving size has seemed to increase since they opened, so you’re definitely good with a half scoop (if you’re willing to try just one). Else, get two halves and share with a friend! My favorite so far is the Black – which is a rich, creamy, dark cocoa that is so perfect on it’s own you won’t even need toppings. I don’t even really like chocolate ice cream, but this stuff is my go to now.
Have you guys listened to the Chris Loves Julia podcast yet? Obsessed. I’m trying to be better about decorating in the new space since the hope is to be there for a while. So – now I’m mood boarding to try and figure out the bedroom and living room. Sorry, Dan.
Currently working on finishing this clothing rack. My friend, Marin, is helping me because I get lost in a hardware store. I like it because it’s simple and clean.
This vegetable lo mein from Pickles & Honey looks so good. We will probably have to sub out the mushrooms because Dan doesn’t like them. One time I said, “I wish you liked mushrooms so I could try some of these recipes” and he said, “You don’t eat meat”. I guess he has a valid point there.
I still really want a very particular style chair for the living room. Something comfy, simple, classic. Still obsessing over the one from Target that is out of stock until July. In the meantime, I’ve been drooling over this one.
I really love this gallery wall. There’s something about the white that is so crisp and clean. If only I had a nice, beautiful chair to put under it.
Woah. Have you seen these s’mores brownie bars? I will definitely have to look into making this vegan friendly because my mouth is already watering. There is something about summer that makes me crave the gooey, melty goodness that is a s’more.
