BBQ party food, you know what that means. It’s time for the Superbowl, and I’m giving you TWO new delicious BBQ recipes to amp up your oh-so-vegetarian-friendly Superbowl party (the second one is coming soon, I promise). Did you know that there are 17 people at the average Superbowl party (I read that online, please don’t hold me accountable)? I didn’t look up the statistics on not eating meat and I’m not about to throw a bunch of math on here so I’ll cut to the chase. These sliders are delicious and are awesome for all your non meat eating and meat eating friends that are coming to your Superbowl party. So just make ’em, okay?!
I haven’t even gotten to the best part yet – these are so easy it’s not even fair. The last thing you need this weekend is a billion dishes to clean and another intensive recipe to impress all your friends. Don’t worry – you’ll still be impressing your friends, but with a lot less work.
For the record, I’ll be routing for the Broncos. Sorry, not sorry. Believe me, I’m still upset about not having Jordy Nelson this year and I love the Packers and all things Wisconsin related (minus the brutal cold, uni-cloud of depression in the Winter, and lack of mountains). I have fair game rights to cheer on the Broncos because I was a Colorado resident for three years and went to college there. No, I’m not being defensive….. But in all actuality, I’ll probably be riding my trainer because this week my hours are in the double digits and I wasted an hour of precious week night trainer time trying to do my taxes. Booooo, adulting.
I would recommend “marinating” your tofu for a few hours. The longer it sits, the more flavor the tofu will pick up. If you forget, that’s totally okay. You can soak the tofu for 15-30 minutes on a side and still pick up great flavor. I also added some Just Mayo Sriracha Mayo for a little kick but feel free to lather on some more BBQ sauce instead if you’re not into that. The more the merrier.
BBQ Tofu Sliders
Servings 6
Time: 1 hour 30 minutes
Ingredients:
- 6 dinner rolls
- 1/2 cup organic BBQ sauce *
- 12 oz extra firm tofu
- 3 TBSP Just Mayo Sriracha (optional) **
- 1/3 cup soy sauce
Directions:
- Cut tofu into 6 servings. I like to cut in thirds lengthwise and in half the other way. Lay pieces down in a shallow dish with soy sauce and let sit for at least 30 minutes before flipping to the other side. Allow tofu to marinate for another 30 minutes. Feel free to let your tofu marinade for longer if you’d like. Personally, I like an hour or so on each side and I just leave it sit for the morning but that’s not a requirement for deliciousness.
- Remove tofu and heat in a large greased skillet over medium heat. Give each side 10-15 minutes. If you would like, you can also toast your rolls at this time to get them extra crispy. Once tofu is done cooking, spread about 1/2 TBSP of Just Mayo (or BBQ sauce) on one side of the roll. Give each slider a piece of tofu and lather with BBQ sauce. That’s it! Super easy, I told you so.
