These days, I’m drinking a smoothie almost every dang day. There’s something about summer that makes me crave something cold and green. Yum. I’ve been mixing things up with spinach and different herbs, but this cucumber mint smoothie is definitely one of my new favorites. The combination of cucumber, with subtle hints of pineapple and coconut are too good to be true. Plus, if you saw my latest post about mint chocolate chip cookies then you know I’m obsessed with fresh mint things now too. I never want summer to end.
For a thicker smoothie, cut the cucumber in small chunks and freeze ahead of time. You can also make ice cubes with coconut water and pop a few of those in too.
Cucumber Mint Green Smoothie

Ingredients:
- 1 1/2 cup coconut water
- 1/2 medium sized cucumber, peeled and roughly chopped
- 1 cup frozen pineapple
- 1 cup spinach, freshly packed
- 1/2 frozen banana
- handful fresh mint leaves, about 15-20
- 3-4 ice cubes, optional for a thicker smoothie
Directions:
Place all ingredients in a blender and blend until smooth. For a thicker smoothie, freeze the cucumber chunks ahead of time. Enjoy immediately with fresh mint or cucumber for garnish.
