Let me just say that when it comes to coffee, I don’t discriminate.
Black coffee, latte, cappuccino, cold press, french press. I do it all. Except that cream and sugar nonsense, meh. I recently considered the fact that I might have a coffee problem when I walked past my dresser and saw that there were five cups with the slightest bit of coffee in them. I like to live life over caffeinated, although this is a habit that I occasionally try to kick and it always seems to go rather poorly.
With the fitness/health challenge I have been doing, I noticed A LOT of people had a really hard time getting rid of dairy in their diets. Sure sure, you can choose non dairy creamers in the long run, but we were also asked to stop eating added sugars, including agave. SO as you can imagine, a lot of people have been having issues with drinking their coffee black. If you are one of these people then you can probably relate to these individuals and you are laughing to yourself because, “Who would ever drink black coffee?”. Me – but that’s not the point. Besides, my stomach lining is probably ruined from my college routine that included 5 PM coffee before my Polymer Engineering lecture twice a week on top of the other 3+ cups I already drank that day. I tried to start drinking half caff a few months ago and that seemed to be going well until I discovered the office Nespresso machine. I started drinking regular coffee again and the 1 PM espressos stopped so I figured it was a wash anyways.
So anyways, I’ve been hearing about this bullet proof coffee everywhere, and decided to give it a go for all those people that can’t stomach (literally) the idea of drinking their coffee black. I will say that the thought of butter in my morning coffee just doesn’t sit right, so you can bet there’s none of that in here. With no added sugars, it’s hard to complain. The coconut oil and almond butter also provide some fats to fill you up so you’re not hangry by the time you get to your 10 AM meeting. Oh, just me? I’ve found that I can drink this coffee when I’m on the go in the morning and I’m often not hungry until very late in the morning.
I swear my life is a constant struggle to not eat my lunch before noon.
I’m sad to say, I did cave and ended up eating some frozen cookie dough I tucked away in the freezer before Christmas. I was kind of annoyed at myself because it wasn’t really THAT worth it so I promptly threw the cookie dough out. At least not having sugar/gluten products in the house has allowed me to cut down my brownie intake by about five less brownies per week. AND now that I don’t have any of that lingering cookie dough, I should be good. Meh.
So, weekend essentials. If you’re anything like me, you have just about zero free time during the week to catch up on life, podcasts, or finally finish the last chapter of that book your reading. I’m kicking off this new (short) series just to share what I’m listening to, what I’m reading, and what I’m eating. Sometimes in the internet world, it’s hard to pick just ONE thing, so I typically go off recommendations from the blogs I read or by word of mouth.

What I’m eating: Sweet Potato Lentil Loaf and Thug Kitchen‘s Pumpkin Chili
7 Ingredient Bullet Proof Coffee
Servings: 1 12 oz serving
Time: 15 minutes
- 8 oz hot brewed coffee *
- 4 oz dairy free milk **
- 1 tsp coconut oil
- 1/2 TBSP almond butter ***
- 1/2 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/4 cocoa, full fat preferred
- Brew coffee as you normally would. I use my french press and let the water sit for about a minute after it reaches boiling before pouring it on the grounds. Once complete, simply add all the ingredients into a blender/vitamix/magic bullet and give that thing a whiz. It shouldn’t take more than a few seconds to combine the mixture.
- Enjoy immediately.
